Budae Jjigae (Korean Army Stew)

This isn't really authentic, as it is usually made with spam, sometimes pork, and lots of mushrooms. I altered to be something I would enjoy and to be a little healthier. 

Ingredients:
Chicken stock
Quinoa (optional)
Onion
Garlic
Chicken sausage (or hotdogs of some sort)
Carrots
Cabbage
Kimchee (cut up bite size)
Chili peppers (or jalapeno)
Black beans (or any beans)
Green onions
Cheddar cheese
Korean Chili flakes
Chili Garlic sauce
Lime
Soy sauce
Rice vinegar 
Pepper
Ramen noodles

Directions: 
Bring some of the stock to a boil and add the onions, quinoa, and garlic. Cook for about ten minutes then add everything else except ramen, green onions, and cheese. Cook for about seven minutes covered, then uncover and add everything else. Cook for about three minutes or until noodles are done. Enjoy!

Beef Ramen Noodle

Ingredients:
Chuck roast or chuck shoulders
Ramen noodles (throw away flavor packet)*
Beef broth (wing it with amount, I used about 1.5 of the larger cartons)
Ginger
Garlic 
Green onion
Pepper
Red pepper flakes
Soy sauce
small splash of rice vineger (or apple cider vinegar)
couple scoops sambal oelek
couple scoops red curry paste
Basil
Honey (or brown sugar)
Lime
Brocoli 
Carrots
Mushrooms (if you want, I do not)

*for gluten free, use rice noodles

Topping options:
Jalapeno
Basil
Lime
Cilantro
Sriracha 
Toasted sesame seeds

Directions:
(Optional: sear the sides of the roast on a skillet with olive oil before beginning) Place roast into crock pot with a little broth (don't submerge it) as well as some fresh ginger, garlic, green onion, and soy sauce. Cook on high for about 3-4 hours (crock pots vary). Once cooked through but not falling apart, remove from crock pot and slice into bite size strips (and give the fat to your dog). Pour broth from crock pot into large stock pot and add sliced beef back into it. Cook on high and add all remaining seasoning, as well as more of what you had already added to he crock pot if desired. Add all to taste. (it's best to get the broth flavor right before adding the veggies to cook). Once boiling, toss in the veggies and ramen noodles. They both cook very fast!  Serve and enjoy with whatever toppings you prefer.

Enchilada Soup


Ingredients:
olive oil
chicken breast
white onion
garlic
1/4 cup corn starch
3 cups chicken stock
1 can enchilada sauce
black beans
diced tomatoes & green chilies
cumin
cheddar cheese
cayenne
paprika
salt
Top with: 
cilantro
avocado
plain greek yogurt
lime
Chips

Directions:
Cook the chicken and shred up into soup. Cook onions and garlic in olive oil before adding corn flour, cook for about a minute then add broth. Add all soup ingredients and cook together for a while, adding the cheese last. Top with the toppings and enjoy!



BBQ Chicken & Veggies


Ingredients: 
Chicken breast 
BBQ sauce
Red pepper
Pineapple
Corn
Quinoa
Cilantro
Zucchini (store was out when I made it!)

Directions:
Cook up the chicken, red pepper, zuchini, and pineapple on the grill. Cook some quinoa and mix in some sweet corn. Top with cilantro. Yum!

Coconut Chicken Curry


Ingredients:
Chicken
Broccoli
Carrot sticks
Cabbage
Red pepper
Onion
Garlic
Jasmine rice
Sesame seeds
Peanut oil
Lime or Lemon

Sauce:
1 cup Coconut milk
2 tbsp Red curry paste
2 tbsp Coconut aminos (or soy sauce but not GF)
1 tbsp Sesame oil
Sriracha
Red pepper flakes
Garlic powder

Directions: Cook jasmine rice and set aside. Heat up peanut oil in wok or large skillet. Cook chicken quickly at high heat and remove. Cook onions, then add broccoli, carrots, cabbage, red pepper, and garlic. Cook until slightly tender, then add back the chicken and add the sauce. Cook on medium heat for a few minutes, add to plate with rice, top with sesame seeds and enjoy!




Nutella Banana Oatmeal


Ingredients:
Quick oats (GF if desired)
Nutella
Banana
Optional: milk/cream

Directions: Cook oatmeal, drizzle with Nutella, top with bananas! 


Taco Bowl


Ingredients:
Ground beef
1 Can diced tomatoes
Black olives
Onion
Kale
Salsa
Avocado
White cheddar cheese
Plain greek yogurt
Chips (GF if desired)
Jalapeno
Cilantro
Lime
Cumin
Chili powder
Cayenne pepper
Oregano
Salt

Directions: Cook ground beef and drain. Use pan to cook onions then return beef to pan with onions. Add can of tomatoes (with juice) and a 1/4 cup of water, along with all the seasoning. Let that all cook down for about ten minutes. Line bottom of bowl with tortilla chips. Add beef mixture, shredded cheese, salsa, chopped kale, black olives, and jalapeno. Squirt avocado with lime and add to side of bowl, and add a dollop of greek yogurt to other side. Top with cilantro and another squirt of lime and enjoy!




Blackberry & Cream Oatmeal


Ingredients:
Quick cooking oats (GF if desired)
Dark brown sugar
Honey
Blackberries
Heavy cream

Directions: Cook oatmeal until desired texture. Add in brown sugar (preferably dark) to desired sweetness.  Top with blackberries and drizzle with honey and cream. 




Spicy Butternut Squash Stew



Ingredients:
Quinoa
Butternut squash
Chicken broth
Chicken
Kale
Red pepper
Sweet potato
Carrots
Onion
Garlic
Red pepper flakes
Cayenne pepper
Pepper
Oregano
Sriracha

Directions:
Cook cut up squash in chicken broth until soft, then blend in blender. Add chicken and squash broth to cock pot and cook on low. Add veggies and everything a couple hours later.

Mongolian Beef Noodles


Ingredients:
Rice noodles
Sliced steak
Red pepper
Broccoli
Carrot sticks
Cabbage
Chopped kale
Garlic
Cilantro
Onions
Peanut oil or avocado oil (best for high heat cooking)
Sesame seeds

Sauce:
1/4 cup Coconut aminos (or soy sauce but not GF)
3 tbsp rice vinegar
1 tbsp Sesame oil
Sriracha
2 tbsp Brown sugar
Red pepper flakes
1/4 cup Water

Directions:  Place rice noodles in bowl or water and set aside. Using a wok (or large pan) heat peanut oil then add very thinly cut steak strips. Sear each side (doesn't take long to cook) then remove from wok.  Add more oil and add onions, cook until almost brown, then add peppers, carrots, garlic, kale, cabbage, and cook together on high heat. Turn down slightly and add sauce and rice noodles. cook until noodles cooked to desired texture, add beef, stir up and enjoy! (top with cilantro and sesame seeds)

Sweet Potato Boats


Ingredients:
Sweet potatoes
Chicken
Onion
Pablano pepper
Red pepper
Zucchini
Chili powder
Cumin
Oregano
Cayenne pepper
Red pepper flakes
Olive oil
Cilantro
Lime

Directions: Cook chicken in crock pot on low with seasonings. Cook peppers, onion, and zucchini in cast iron skillet and add to crock pot 1 hour before meal. Cook sweet potatoes at 350 for 50-60 minutes (poke holes). Cut in half longways, scoop out some of the innards, and brush with olive oil, chili powder, and lime mixture. Cook for another 5-10 min. Add chicken mixture to potato boat and top with cheese, cook for another 5-10 min, take out of oven, sprinkle cilantro and squirt of lime, enjoy!

Scramble Bowl


Ingredients:
Baby reds
Eggs
Carrot sticks
Spinach
White onion
Red pepper
Salt
Pepper
Red pepper flakes
Olive oil

Optional:
Bacon or sausage pieces 

Directions: Cook potatoes in boiling water until almost done then cut into chunks. Using olive oil and a cast iron skillet, cook the onions, red peppers, and potatoes. Avoid moving the potatoes often in order to crisp one side. Once almost done, add the carrot sticks and spinach. Depending on if size of cast iron is big enough, cook scrambled eggs in new pan or same one, mixing it all together eventually.

Mini Meat Loaves



Ingredients:
2 lbs very lean ground beef
Chopped spinach
Panko bread crumbs (or leave out for GF)
Sauted chopped onion
Garlic
2/3 canTomato sauce
Dash Worcestershire sauce
1 egg
Salt
Pepper
Rosemary
Thyme

Sauce: 
Rest of can of tomato sauce
1/4 cup BBQ sauce
1/8 cup ketchup
Dash of Worcestershire sauce
1/3 cup brown sugar


Directions: Mix everything up in a big bowl, and then pack into greased muffin tin.  Cover each one in the sauce. Bake at 375 for 35 minutes until 160 degrees inside.

Sriracha Turkey Stir Fry


Ingredients:
Ground turkey
Red pepper flakes
Coconut oil
Sesame oil
Onion
Zucchini
Red Pepper
Carrot sticks
Cabbage
Garlic
Lemon
Ginger
Coconut aminos (or soy sauce but not GF)
Rice vinegar
Sriracha 

Optional: 
General Tso sauce
Toasted Sesame seeds
Sunflower seeds
Noodles
Rice

Directions: Cook the ground turkey with red pepper flakes. Once cooked add a dash of general tso if desired (do not need much!).  In cast iron skillet, heat up coconut oil and sesame oil. Cook onion and red pepper, then add zucchini, carrot, garlic, and ginger toward end (they don't take as long to cook as the onion and pepper). Splash in some rice vinegar at some point. Add turkey and cabbage to veggie skillet and add squirt of lemon, mixing it all together.  Top with toasted sesame seeds, sunflower seeds, and Sriracha! Make it spicy!

Sriracha Guac Burgers


Ingredients: 
Organic hamburgers
Guacamole 
Lettuce
Sriracha 
Whole wheat ciabatta buns

Directions:  Cook hamburger patties on skillet until done. Cook ready to bake ciabatta buns in oven until done, cutting in half and adding guac to top half.  Add burgers to buns, top burger with sriracha and lettuce, enjoy!

Chicken Lettuce Boats


Ingredients:
Chicken 
Poblano pepper
Red pepper
Can petit diced tomatoes 
Chili powder
Cumin
Red pepper flakes
Salsa
Lettuce

Directions: Add all ingredients but the lettuce to crock pot, cook until done, enjoy!

Asian Burgers


Ingredients: 
Burgers (turkey or beef)
Pineapple rings sliced
Leafy greens of choice
Broccoli slaw mixture
Toasted Sesame Ginger dressing (or asian dressing of choice)
Wheat english muffin

Directions: Self explanatory, see picture and make it happen. 


Simple Lettuce Tacos


Ingredients:
Full leaf lettuce
Ground beef
Black olives
Grape tomatoes
Garlic
Onion
Cheese
Cumin
Chili powder

Directions: Cook ground beef adding onions near end, drain. Add some some water along with the cumin, chili powder, and garlic. Cook down for ten minutes. Add meat to lettuce boats, add toppings, enjoy!




Shredded Beef Fajitas


Ingredients:
Chuck roast
Organic Tortillas 
Salsa
Avocado
Cheese
Red pepper
Green pepper
White onion
Lime
Cumin
Chili powder
Garlic powder
Red pepper flakes
Salt 
Pepper

Directions:
Cook chuck roast in crock pot with chili powder, cumin, garlic powder, red pepper flakes, salt, and pepper (can also add fresh onion and garlic).  Using cast iron skillet for best results, heat olive oil and saute onions and peppers, adding a little seasoning to these as well. Once cook thoroughly, add shredded beef and stir, allowed to cook for about a minute before turning off heat (skillet stays hot). Heat tortillas on skillet briefly with olive oil, flipping after about 30 seconds on each side. Fill with the fajita skillet concoction and add avocado, salsa, cheese, and lime squirt!


Easy Turkey Egg Sandwich


Ingredients:
Whole wheat bread (whatever preference)
Lunchmeat turkey
Scrambled eggs
Spinach
Provolone cheese
Salt
Pepper
Oregano

Directions: Cook scrambled eggs, adding salt and pepper.  Toast bread, add turkey, eggs, spinach, cheese, and oregano. Enjoy!
