BBQ Chicken & Veggies


Ingredients: 
Chicken breast 
BBQ sauce
Red pepper
Pineapple
Corn
Quinoa
Cilantro
Zucchini (store was out when I made it!)

Directions:
Cook up the chicken, red pepper, zuchini, and pineapple on the grill. Cook some quinoa and mix in some sweet corn. Top with cilantro. Yum!

Apple Sage Turkey Meatloaf























(I cut recipe in half for a mini-loaf for myself)

Ingredients:
  • 2 apples, cored, peeled and grated (strain out the juice)
  • 1 large yellow onion, finely chopped (about 1 cup)
  • 2/3 cup Italian-style breadcrumbs*
  • 1/2 cup milk
  • 2 pounds ground turkey
  • 1/4 cup chopped fresh sage leaves
  • 1 large egg, lightly beaten
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup tomato sauce (I used a BBQ marinade sauce that was delicious)
  • I threw in some shredded carrots & zucchini
Directions: Preheat the oven to 400°F. Line a small baking sheet with parchment paper.  Sauté onions.  Combine apples, onion, carrots, zucchini, bread crumbs and milk in a large bowl and let stand 5 minutes to soften bread crumbs. Add turkey, sage, egg, salt and pepper and mix until combined. Scrape the mixture onto the baking sheet. With water-moistened hands, shape the mixture into a loaf about 10 inches long and 5 inches wide (I think I would prefer individual smaller loaves!  All of them would have more yummy crust). Spread top of loaf with 1/4 cup of the bbq or tomato sauce, if using, and bake until meatloaf is lightly browned and cooked through (an instant-read thermometer inserted into the center should register 165°F), 50 to 60 minutes.

Let meatloaf sit 10 minutes before slicing and serving. Serve with warmed tomato sauce/bbq if desired.

*Breadcrumbs:  I don't buy them, they have way too many ingredients to just be bread crumbs.  Toast bread in oven at 250, keep checking it and breaking it up.  Throw it in a blender when its all dried out.  Add oregano, basil, garlic powder, rosemary, thyme, viola! italian breadcrumbs!

BBQ Burrito Joe

I made with with my frozen left overs from my sloppy joes.  Just threw together what I had, but it worked out well!













Ingredients:
Sloppy Joe meat

Carrot sticks
Brown rice (or quinoa, or white, or whatever)
Tortilla
Corn
Natural BBQ sauce
Black beans would be good too, but I didn't have any

Directions:

Warm tortilla on skillet.  Cook brown rice.  Throw in buritto, layer cheese, then meat, BBQ sauce, cheese, carrot sticks, corn, beans, etc.

BBQ Sloppy Joes

Ingredients:
1 lb. extra lean ground turkey
1/2 red onion, roughly chopped
3 garlic cloves, chopped
1 orange or red bell pepper, chopped
1/3 cup roughly chopped purple cabbage
1 small diced tomato
1 tsp. cayenne pepper
1 tsp. ground cumin
Pepper and sea salt to taste
1 tsp. olive oil

Natural BBQ sauce

Directions:

Combine everything and cook on skillet with olive oil.  Add BBQ sauce last.

Shredded Beef













Ingredients:

Beef chuck roast
Chopped onion
Pepper
Salt
Garlic powder
Thyme
Rosemary

Serve with:  buns, on baked potato, on roasted veggies/baby reds

Directions:

Place meat and onions in crock pot with a little water.  Cook all day.  Sprinkle in seasonings at some point.  Add BBQ if desired.  Shred up with fork.  Place on something and drizzle meat with BBQ sauce.


Shredded BBQ Chicken













Ingredients:

Oven
Olive oil
Chicken
Rosemary
Thyme
Garlic
Pepper

Crock 
Chicken
BBQ sauce
Brown sugar

Serve with:  Buns, tortillas, on baked potato, on roasted veggies/baby reds

Directions:

Oven
Heat oven to 380.  Spray glass pan with olive oil cooking spray and sprinkle chicken with the seasonings.  Cook chicken for 45 or so min, cutting it up as it cooks to shred a bit.  Drizzle with spicy BBQ when done.


Crock
Put chicken in crock pot, at some point add the BBQ and brown sugar.
