Veggie Beef Potato Pile

Ingredients:
Ground beef
Broccoli
Garlic
Carrot sticks
Zucchini
Quinoa
Thyme 
Oregano
Rosemary
Olive oil
Natural BBQ sauce
Potatoes

Directions:
Cook ground beef in skillet with onion and garlic..  Cook veggies in pot with a little boiling water to soften slightly, then add to beef mixture.  Add a little natural BBQ sauce to mixture as well as seasonings. Put olive oil, rosemary, pepper, and thyme in a bowl and rub onto potato.  Loosely wrap potato in foil and cook at 425 for 50-60 minutes.

Cut open potato however you like and smother with beef and veggie mixture.  Add some cheese on top if you'd like.
