Veggie Quinoa Tater Tot Hot Dish

Whole grain, beef protein, all kinds of veggies, not bad!



Ingredients:
Ground beef
Tater Tots (I like organic ones)
Garlic
Onion
Green beans
Carrots 
Zucchini 
Red pepper
Veggie broth
Quinoa
Cream (half & half)
Cheese
Rosemary
Thyme
Pepper
(all veggies are more whatever you want/have)

Directions:
Warm broth in sauce pan and cook quinoa in it.  Add half and half and some cheese.  Stir and melt into a nice sort of sauce.  Cook ground beef and veggies on large skillet (cut veggies very small).  Add creamy cheese sauce stuff you made and stir up (doesn't need much sauce at all, don't over do it!)  Spray glass pan with non-stick olive oil spray and pour in mixture.  Top with frozen tater tots or potato of choice.  Cook at 425 for 25 min.
