Hash Brown Egg Nest

Ingredients:
Eggs
Hash browns
Spinach 
Maple Turkey (or bacon)
Cheddar cheese
Salt
Pepper

Directions:
Let potatoes thaw and stir up with a bit of the cheese and some olive oil.  Press into muffin cups and bakes at 425 for about 15 min until edge potatoes are browning.  Scramble up eggs with whatever stuff you want in them (I did the spinach and turkey) and pour into the half baked potato cups.  Top with a little sprinkle of cheese and pepper.  Turn oven down to 350 and bake for another 15 minutes until eggs are solid.
