Avocado
Lime
Pico de Gallo
Quinoa
Cheese (optional)
Directions:
Cook Quinoa (about 1 cup with 1 1/4 cup water, boil then simmer 10-15 min) and fluff with fork. Squirt lime over quinoa. Layer rest of ingredients as you like, adding more lime to the avocados. Yum!
